If you've eaten at David Chang's Momofuku, Mario Batali's Del Posto or even Gramercy Tavern, chances are you've eaten something foraged by Evan Strusinski. The Vermont native has managed to make a name seeking out everything from mushrooms to herbs to sea grasses in Maine and Vermont and shipping them to celebrity chefs looking for ingredients no one else has. Mr. Strusinski began the hunt long before the locavore and food-foraging movements came into vogue, and now seemingly every new York chef wants him to fulfill their orders and even offer surprise ingredients.
