Organic foods on the rise

Organic foods are a $4.2 billion industry that grew 24% in 1997, according to the newly created Organic Trade Association, Greenfield, Mass. The group said 66% of organic foods distribution is through health and natural food stores, with 31% being distributed through mass market grocery and the remaining 7% moving through club stores, discounters and foodservice outlets. Of organic foods that have successfully mined the supermarket, 55% are canned and jarred products such as organic baby food, pasta sauces, salsas, soups and juices.
